PAA9 - Veggie Stir Fry

Foods 30 - Oven Fries and Sauce

For the "What I have learned" section of your reflection please discuss the three ways of thickening sauces and which one you used.

White Sauce
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk

In a small saucepan over medium heat, melt butter. Add flour and stir until the butter and flour are well combined. Pour in milk, stirring constantly as it thickens. Add more milk depending on desired consistency.

Beef Flavoured Gravy

  • 1 1/2 cups water
  • 3 teaspoons beef bouillon
  • 1/4 cup all-purpose flour
  • 1 onion, chopped
  • 1/4 cup butter

  • Combine water, bouillon, flour, onion and butter in a small saucepan. Bring to a boil over medium heat and cook until thickened.

    Healthy Oven Fries
    Crisp outside and moist inside, these easy fries appeal to the most discriminating aficionado.
    Ingredients
    • 3 baking potatoes , (unpeeled)3baking potatobaking potatoes, (unpeeled)
    • 3/4 tsp chili powder 3/4 3/4tsp tspchili powder
    • 3/4 tsp paprika 3/4 3/4tsp tsppaprika
    • 1 tbsp vegetable oil 1tbsp tbspvegetable oil
    • Salt Salt and pepper to taste
    Preparation
    Place baking sheet in 450°F (230°C) oven for 5 minutes or until hot. Meanwhile, cut each potato lengthwise into desired shapes. Rinse with water and dry with paper towels. Place in bowl and toss with oil, chili powder, paprika salt and pepper. Sprinkle with oil; toss. Bake in single layer on baking sheet for 15 minutes; turn and bake for 15 to 18 minutes or until crisp and golden brown.

    Foods 10 - Granola Bars, Pumpkin Pie Dip and Apples

    Chewy Granola Bars


    Ingredients

    • 2-1/4 cups rolled oats
    • 1/2 cup all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon vanilla extract
    • 1/3 cup butter, softened
    • 1/4 cup honey
    • 2 tablespoons and 2 teaspoons packed brown sugar
    • 1 cup miniature semisweet chocolate chips
    1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 8x8 inch pan.
    2. In a large mixing bowl combine the oats, flour, baking soda, vanilla, butter or margarine, honey and brown sugar. Stir in the 2 cups assorted chocolate chips, raisins, nuts etc.
    3. Lightly press mixture into the prepared pan. Bake at 325 degrees F (165 degrees C) for 18 to 22 minutes or until golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

    Pumpkin Pie Dip
    • ¼ can pumpkin
    • 3 tbsp brown sugar
    • ½ tsp vanilla
    • pinch cinnamon
    • pinch pumpkin pie spice
    • 3 tbsp fat free Greek yogurt
    • ¼ cup cool whip free
    • cut up apples to dip

    Mix pumpkin with brown sugar, vanilla and spices, blend well. Mix in yogurt. Fold in cool whip and chill in refrigerator until ready to eat.
    Makes about 6 cups.

    By entering personal information, such as age and sex, selecting various items from the four food groups and choosing different types of physical activities, you can create a tool that is customized just for you.
    There are lots of foods to choose from in each of the four food groups, so be sure to try different combinations when creating this tool that illustrates how you can eat well with Canada's Food Guide.

    Foods 10 and PPA 9 - Quinoa Breakfast


    Blueberry Flax Hot Cereal with Quinoa

    About This Recipe

    "This wholesome, hot breakfast cereal has the perfect combination of flavour and nutrients. You can substitute old-fashioned rolled oats for the quick cooking oats; just add them to the mixture after seven minutes of cooking time. From Quinoa 365."

    Ingredients

      • 2/3 cup water
      • 3 tablespoons quinoa
      • 2 tablespoons quick-cooking oatmeal
      • 1 -2 tablespoon maple syrup or 1 -2 tablespoon honey or 1 -2 tablespoon brown sugar
      • 1 1/2 teaspoons flax seeds ( ground or whole)
      • 2 tablespoons blueberries, fresh or 2 tablespoons blueberries, frozen and thawed
      • milk (optional) or half-and-half cream (optional) or vanilla yogurt (optional) or soymilk (optional) or almond milk (optional)

    Directions

    1. Rinse quinoa well with water to remove bitter coating; drain.
    2. Place the water and quinoa in a small saucepan, bring to a boil, and cover. Reduce to a simmer and cook for ten minutes. Stir in the oats, cover and continue to cook for another five minutes, until the oats are tender. Remove from heat. Stir in the maple syrup and flax. Fold in the blueberries and top with milk, cream or yogurt, if using. Serve immedietely.















    Make a Meal at Home

    The PAA 9 and Foods 10 classes have started thinking about a meal they would to prepare for their families. It looks like a lot of families are in for a very enjoyable meal.

    Here are the intructions and the rubric.

    Make a Meal at Home
    Plan a dinner menu that includes a protein (meat or alternative), a salad and/or vegetable(s), and a carbohydrate (potato, rice or bread). The foods chosen should not be quick, convenience foods, but foods that are bought fresh and prepared. The assignment will be completed as a blog.

    Part I - Preparation
    You must select and copy three recipes of your choice. You can use the internet, my blog - leboldusfoods2.blogspot.com, cookbooks and/or family recipes to gather your recipes.  The list of ingredients and all of the directions are to be listed in the recipes submitted.  The three recipes must be initialled by Mrs. Gelowitz by the end of the period, Wednesday, November 16.  Save these recipes on your blog.

    Foods 30 - Soup Without a Recipe

    Soup Without a Recipe
    1.  Prepare your broth.  Choose one of three ways:
    a.  Make your own
    b.  Use powdered
    c.   use canned
    2.  Chop your vegetables – onions are in most soups.  Find whatever you can from the fridge.
    3.  At this point nothing has been made in the soup pot. If you are using raw meat – cook it now!!  Cook up the meat in the pot being used for soup.
    4.  Take the meat out of the pot and add a small amount of oil and sauté the vegetables.
    5.  Once the vegetables are cooked add the meat to the pot along with the spices and seasonings.
    6.  Pour the broth into the soup pot.  Add additional liquid (usually water) to cover what is in the pot.
    7.  Add starchy foods – i.e. potatoes, corn, rice, etc. Cook for 20 minutes.
    8.  Add tomatoes, tomato sauce, cream and/or fresh herbs.
    9.  Thicken soup now by adding cornstarch or flour.  OR add noodles and cook for 5 minutes.
